The double-zero flour that gives this sandwich shop its name is technically a reference to the finely ground wheat essential for pizza and pasta dough, but for the daily crowd on Nieuwe Spiegelstraat, it just means bread. Since opening in 2022, Zero Zero has operated as a dedicated schiacciata bar, serving the crispy, oil-rich Tuscan flatbread to a stream of customers that often spills onto the pavement outside. The interior is stylish but undeniably tight, prioritizing kitchen output over dining comfort. While a handful of seats exist, they are usually occupied or blocked by the queue, making this firmly a takeaway destination. You watch the staff slice large slabs of fresh-baked bread horizontally before layering in ingredients that are imported directly from Italy. The menu is short and focused. The most visible item is the mortadella sandwich, stacked with stracciatella cheese and dusted with pistachios, but the kitchen also turns out savory roasted porchetta and lighter options with zucchini and pesto. Because the bread is baked in batches throughout the day, the texture stays light and crunchy rather than dense. Service moves at a steady clip, but the demand often outpaces the counter speed during peak lunch hours. Most people grab a coffee or a container of tiramisu to go with the main event, eating their lunch standing up or finding a spot along the nearby canals.
