This sets the pace for De Nada Cantina, a high-energy operation that runs on a philosophy of "tacos y margs y menos" – tacos, margs, and less. Whether you are sitting under the glass roof of the greenhouse-style original or on the patio of the newer South 1st outpost (which occupies the former El Mercado building), the experience is built on volume and speed. The kitchen avoids the sprawling encyclopedias of typical Tex-Mex menus in favor of a tight selection centered on the comal. Blue corn masa is pressed and cooked fresh for every order, resulting in tortillas that actually taste like corn rather than just acting as a vessel. These hold slow-braised meats like barbacoa, carnitas, and birria, served simply without excessive garnish. The drinks are famously potent, particularly the "El Chingon" and the frozen options, which tend to arrive quickly. Both locations are loud and dog-friendly, filling up with groups who are happy to shout over the music. It is a place for a fast, buzzy dinner where the line between the patio and the dining room is usually blurred.
