What began as a cottage industry in a Brooklyn apartment – specifically unit 4F – has solidified into a permanent fixture on Montague Street. The baking process reflects the technical precision of co-founder Gautier Coiffard, a former software engineer who treats dough lamination with exacting standards. The result is a counter stacked with hand-rolled, slow-fermented croissants that lean toward the darker, flakier end of the spectrum. You’ll see trays of everything-seasoned croissants, raspberry kouign-amann, and the bakery’s signature miniature croissant cereal moving quickly; inventory is finite, and specific items often sell out before noon. Getting your hands on a pastry usually requires patience, as lines tend to form early and stretch down the sidewalk. While the West Village outpost operates strictly as a takeout window on West 10th Street – handing over paper bags to pedestrians on the move – the Brooklyn Heights flagship offers more room to linger. An upstairs loft provides seating that mimics a living room, offering a bit of distance from the retail activity downstairs. Come evening, the Montague Street space shifts gears. Once the morning rush clears, the bakery transitions into L’Apero, an intimate natural wine bar. The focus moves from coffee and viennoiserie to French vintages, cheese boards, and sourdough served alongside classic entrees, effectively keeping the space active from early morning until late night.
