From the 70th floor of the Swissôtel The Stamford, SKAI offers an uninterrupted panorama of the Singapore skyline. The entire experience is built around this sky-high vantage point, with the view becoming particularly impressive as sunset approaches. Inside, the space is sleek and contemporary, designed to frame the city below rather than compete with it. With a capacity of just 53 guests, the bar maintains a sense of intimacy despite the expansive backdrop. The menu is centered on a modern grill concept with distinct Japanese culinary influences, a vision directed by Executive Chef Seumas Smith. The kitchen focuses on meticulous technique and fresh produce, turning out dishes like Westholme wagyu flat iron steak and iberico pork chops. A separate tuna bar adds another layer to the food program. On the drinks side, the bar handles classic cocktails like the Manhattan and Espresso Martini with confidence, while also pouring a list of more innovative, globally inspired creations. The window seats are, naturally, the main draw, and they are often booked a full month in advance – a crucial detail for anyone planning a visit for a special occasion like a birthday or anniversary. There are a few house rules to be aware of. A strict dress code is in effect, so while Bermudas are permitted, singlets, slippers, and flip-flops are not, and closed-toe shoes are required for entry. After 6:00 PM, all guests must be at least 18 years old.
